| 2 gal. | Water |
| 2 # 10 cans | Tomatoes, chopped, canned |
| 12 oz. | Tomato Paste |
| 1 # 10 can | Kidney Beans, canned, drained and rinsed |
| 2 lbs. | Potatoes, diced |
| 1 cup | Basil |
| 1/2 cup | Oregano |
| 1 lb. | Elbow Macaroni or Ditilani pasta |
| 1 # 10 can | Cannellini Beans, canned, drained and rinsed |

Zucchini, diced Escarole or Spinach, rough chopped |
| 2 cups | Italian Parsley, chopped |
| 1 lb. | Parmesan Cheese, grated |
Preparation
- In a 10 gallon steam jacketed kettle or 8 gallon sauce pot, heat olive oil over medium high heat. Add onions, celery, carrots and garlic. Saute over medium heat 5-7 minutes, stirring frequently.
- Add water, Custom Culinary® Gold Label Beef Base, tomatoes, tomato paste, and kidney beans, mixing well. Heat to boiling. Reduce heat and gently boil 20 minutes, stirring frequently.
- Add potatoes, basil and oregano, macaroni, and garbanzo beans. Heat to boiling. Gently boil 15-20 minutes until macaroni is tender, stirring frequently.
- Add zucchini, parsley and parmesan cheese, mixing well. Gently boil 5 minutes, stirring frequently.
