New Jersey-Style Garlic Blue Claws
Chef Smith's favorite simple garlic recipe, New Jersey-Style Garlic Crabs, features Custom Culinary® Master’s Touch® Roasted Garlic Flavor Concentrate. and consists of fresh cleaned cracked crabs sautéed over high heat with lots of garlic, onion, butter, ground pepper and chili flakes.

| 8 each | Large Blue Claw Crabs |
| 1 Cup | Onion, small dice |
| ¼ Cup | Olive Oil |
| 1 Tbsp | Old Bay Seasoning |
| 2 Tbsp | Custom Culinary® Master’s Touch® Roasted Garlic Flavor Concentrate |
| 1 Tbsp | Red Chili Pepper Flakes |
| 2 cups | Butter, softened |
| To taste | Sea Salt & Pepper |
| ½ cup | Italian Parsley, chopped |
Preparation
- Place live crabs in an ice bath for approximately 20 minutes.
- When crabs are dormant, quickly clean by removing the shell, gills and apron flap.
- Rinse with cold water.
- After crabs are thoroughly clean, heat olive oil in large sauté pan and add the onions.
- Cook onions 1-2 minutes.
- Add the crabs and dust with Old Bay seasoning.
- Add the Garlic Flavor Concentrate and stir until well incorporated.
- Sauté crabs until cooked through, approximately 5 minutes.
- Add the chili flakes, softened butter and salt and pepper.
- Sauté an additional few minutes until butter begins to brown.
- Toss with the chopped parsley and serve with a crispy baguette.
