Chef's Tip
For a more robust jam, reduce the Marsala sauce separately until syrupy before adding to the shallots. This jam also pairs well with soft cheeses and roasted poultry dishes. Substitute your preferred cheese if feta isn’t desired.

| 2 cups | Shallots, thinly sliced |
| 2 tbsp. | Olive Oil |
| ½ cup | Brown Sugar |
| 2 qts. | Custom Culinary® Gold Label Marsala Sauce |
| ¼ cup | Balsamic Vinegar |
| 125 ea. | Crostini |
| 4 cups | Feta, whipped |
Preparation
- Heat olive oil in a large sauté pan over medium-low heat. Add shallots and cook slowly, stirring often.
- Continue cooking 30–45 minutes until deeply browned and caramelized.
- Add brown sugar, Marsala Sauce, and balsamic vinegar. Cook until shallots are glazed and sauce has reduced to jam-like consistency.
- Cool jam slightly before storing.
- For service, spread jam onto crostini and top with a knob of whipped feta.
